Your summer hasn't officially started until you had your first S'more - it's a rule of summer that I totally didn't just make up this second. But honestly, S'more's are a summer staple : a tradition that reminds you of your childhood, nights spent around a campfire or grill where crickets and fireflies happily runabout around you creating the perfect atmosphere. I remember many nights at my grandmother's home where my siblings and I would gather around a fire-pit in her huge backyard just being able to spend time together over a common love of chocolate and marshmallow. I even find now in my adult life, I am still trying to find the perfect excuse to make this delightful delicacy once more!
For some, it can be understandable that the classic S'more can get a little, shall we saw - "overplayed" - during our more grown-up years. While the classic will always live up to expectations, every now and then it is okay to think outside of the box when it comes to the recipe! This is why we did the research and found some incredible recipes that kick S'mores up a notch without losing its classic charm. Here are our favorites:

Caramel Apple S'Mores
Bring a little taste of Fall into this Summer recipe with these amazing Caramel Apple S'mores!
Serves : 4 | From Delish
Gather Together :
- 8 Marshmallows
- 2 Granny Smith Apples- Cored and Thinly Sliced
- 4 Squares of Hershey's Milk Chocolate
- Warm Caramel - For Drizzling
Directions :
- Toast marshmallows until golden.
- Sandwich s’mores: Top one apple slice with a Hershey’s square and two toasted marshmallows. Drizzle with caramel and top with a second apple slice.
- Repeat to make four apple s'mores.
S'Mores Bars
These bars are a cross between a good ol'fashioned Rice Krispie treat and S'mores - which means that you will be obsessed! The recipe swaps the Rice Krispies for Golden Grahams which makes for an interesting game changer!
Serves : 20 Bars | From Delish
Gather Together :
- 3 Tablespoons of Butter - Melted, Plus More
- 1 12 Ounce Package of Mini Marshmallows
- 7 Cups of Golden Grahams Cereal
- 3 Hershey's Milk Chocolate Bars - Broken Into Pieces
Directions :
- Grease a 9"-x-13" pan with butter. In a large pot over medium-low heat, melt butter. Add all but 1 cup of mini marshmallows and stir until melted and smooth.
- Remove from heat and quickly stir in Golden Grahams until evenly coated. Press into pan and top with chocolate pieces and remaining 1 cup mini marshmallows.
- Heat broiler, and cook until marshmallows are toasted, about 2 minutes.
- Let set at least 30 minutes before slicing.
S'Mores "Grilled Cheese Sandwich"
Have you ever heard of putting Fluff and Nutella on your sandwich? Well this is exactly like that and makes for an amazingly decadent snack or dessert!
Serves : 4 Sandwiches
Gather Together :
- 4 Tablespoons of Butter
- 8 Slices of White Bread
- 4 Cups of Mini Marshmallows
- 1 Cups of Chocolate Chips
- 4 Graham Crackers - Slightly Crushed Into Big Chunks
- 1/4 Cup of Cinnamon Sugar
Directions :
- To make one sandwich, top a slice of bread with 1 cup marshmallows, 1/4 cup chocolate chips, and ¼ of crushed graham crackers. Repeat to make 4 sandwiches.
- In a large skillet over medium heat, melt butter. Working in batches, cook sandwiches until golden and toasted on both sides, about 2 minutes per side.
- Immediately sprinkle cinnamon sugar over sandwiches and serve warm.
S'Mores Icebox Cake
- 1 Package of Instant Chocolate Pudding
- 2 Cups of Cold Milk
- 1 Cup of Heavy Cream
- 2 Tablespoons of Sugar
- 7 Ounces of Marshmallow Crème
- 1 Sleeve of Graham Crackers
- 1 12 Ounce Package of Mini Marshmallows
Directions :
- Line a 9"-x-5" loaf pan with plastic wrap, allowing overhang on all sides.
- In a large bowl, whisk pudding and milk until fully combined. Let cool completely.
- Make marshmallow whipped cream: In a large bowl, beat heavy cream and sugar until stiff peaks form. Fold in crème and set aside.
- To loaf pan, add 1 layer of graham crackers, breaking crackers up when necessary to completely fill bottom. Spread 1/3 chocolate pudding on top of that, then add an even layer of mini marshmallows (about 1/2 cup). Spread on 1/3 marshmallow whipped cream mixture, then repeat process 2 more times, ending on marshmallow whipped cream. Refrigerate overnight.
- When ready to serve, invert cake onto flat serving platter and peel off plastic.
- On a baking sheet, add 1/2 cup mini marshmallows. Using a kitchen torch or broiler, toast marshmallows until golden brown. Once cool enough to handle, place on top of cake. Serve immediately.
