Top 3 Favorite Pumpkin Recipes

Pumpkin spice has been delivered in a new way with these waffles. They are gluten free and delicious. These waffles are so soft due to the addition of oat flour. For this recipe to be gluten free, you must use gluten free oats.

  1. In a large bowl, mix the oat flour, baking powder, salt, cinnamon, ginger, nutmeg, and spices together.
  2. In a separate bowl, whisk eggs, milk, pumpkin puree, maple syrup, and vanilla extract.
  3. Pour the liquid ingredients into the flour mixture and stir until combined. The mixture will be a tad lumpy. Let the batter sit for 10-15 minutes.
  4. Using a waffle iron, pour the dough into the center of the pan. Once the ends are golden brown, take the waffles out and transfer them to a cooling rack.
